Orange Marmalade-Coconut Bars
Base
1 cup butter
1 cup granulated sugar
1 egg yolk
2 cups sifted flour
1 teaspoon baking powder
Sprinkle of salt
1 teaspoon vanilla extract
Preheat oven to 350 degrees F.
Cream butter and sugar until creamy. Add egg yolk, vanilla extract and dry ingredients. Put into 13 x 9-inch pan. Bake for 20 minutes. Cool. Cover with filling. Reduce oven temperature to 325 degrees F.
Filling
1 egg white
3 eggs
1/2 cup granulated sugar
1 cup orange marmalade
1 cup flaked coconut
1 cup chopped nuts
1 teaspoon baking powder
1/4 cup all-purpose flour
Beat egg white and whole eggs until thick and foamy. Add sugar; fold in marmalade, coconut, nuts, baking powder and flour. Bake at 325 degrees F for 45 minutes.
Cool. Make frosting of 2 cups confectioners' sugar, 4 tablespoons butter and 4 tablespoons marmalade and spread over top. Chill and cut with sharp knife.
